Potato Latkes

Potato Latkes

Ingredients
3 medium potatoes
1 spring onion chopped finely
1 egg
1 tbsp flour
1 tsp black pepper powder
Salt to taste
Oil for frying

Directions

Peel the potatoes and grate them. Squeeze the juice out of them and keep aside. Retain the juice. Beat the egg and add flour. Mix well. Add the spring onions and the grated potatoes. If the mixture is too dry to mix, add 2 tbsp of the potato juice. Add seasoning and mix. In a frying pan, heat a tablespoon of oil. Drop a dollop full of the potato mixture and flatten with a spoon. Fry on one side till golden brown and slightly crisp. Flip and fry on the other side as well. Serve with ketchup or sour cream.
