Ingredients
1 kg Chicken cut into pieces
3 Potatoes Chopped
4 tbsp Cooking oil
2 heaping tbsp East Indian Bottle masala (or curry powder)
2-3 bay leaves
salt to taste
2 large red onions. sliced
2 green chilies (deseed if you want it less spicy)
2 cups freshly grated coconut (you can also use dry grated
coconut)
2 inch fresh ginger
8 large garlic cloves
1 tablespoon tamarind paste or vinegar or lemon juice
Some freshly chopped coriander for garnishing
Directions
Wash chicken pieces well, drain and keep aside. In a frying pan, dry roast the freshly grated coconut until
lightly toasted and light brown in colour. Remove from the pan and set aside in a bowl. In the same pan, dry roast
the onions, green chilies, ginger and garlic until fragrant and slightly brown. Transfer this and the roasted coconut to a food
processor or blender and blend with a little water and blen to a smooth paste. Set this
paste aside.
In a pan/cooking pot, stir-fry the chicken pieces over medium heat in oil for two minutes until lightly browned on all sides. Add the ground masala paste and saute for 2 minutes. Add 2-3 bay leaves. Then add the bottle masala and saute for a minute more. It is important to cook the spices until they are fragrant so don't make haste. If necessary, add a few tablespoons of water to prevent it from burning at the bottom. Then add a cup of water and season with salt and pepper. Then, add the chopped potatoes - make sure the potatoes are immersed in the water. Cover and cook for 20 minutes until the chicken is cooked and the potatoes are tender. Finally, add the tamarind paste or vinegar or lemon juice and cook a minute more. Taste and adjust seasoning. Garnish with freshly chopped coriander. Service with white rice and some salad made with chopped onion, tomato and lime juice on the side.

Sweet, Sour & Sticky Chicken Wings
1 Kg Chicken Wings
For the marinade
3 tablespoons cornflour
1/4 tsp salt
1/2 tsp red chili powder
1 tablespoon oil
2 flakes garlic, grated or chopped finely
1" ginger, grated or chopped finely
1/2 tsp black pepper powder
3 tablespoons dark soy sauce
1 tablespoon white vinegar
2 tablespoons honey
2 teaspoons sesame oil
1/4 tsp ajinomoto (optional)
For garnishing
2 teaspoons sesame seeds
1 green onion, chopped finely
Directions
Wash chicken wings and drain well. Marinate the chicken wings with red chili powder, cornflour and salt for 1/2 an hour. Preheat oven at 180 degrees C. Place chicken in a sheet pan and grill the chicken in the oven for 20 minutes or till the chicken is almost cooked. You can also use an air fryer. Remove the chicken wings and keep aside. In a wok add some cooking oil and stir fry the ginger and garlic. Add the dark soy sauce, honey, pepper powder, and vinegar. Add the grilled chicken wings and mix to coat the wings with the sauce. Stir fry for a few minutes till chicken wings are well cooked. Check seasoning and add salt if required. Add ajinomoto and mix well. Drizzle with sesame oil and turn off the heat. Remove chicken wings on a serving platter and sprinkle sesame seeds. Garnish with chopped green onions. Serve with stir fried noodles or fried rice.

3 chicken breasts cut into cubes or thin slices
3 spring onions, chopped
1 packet firm tofu, cut in cubes
2" piece ginger, thinly sliced
1 tablespoon light soy sauce
2 tablespoon corn starch
1 tsp white pepper powder
1/4 tsp ajino moto (optional)
1 tsp white vinegar
4 tablespoons cooking oil
a few drops of sesame oil
Directions:
Apply 1 tablespoon cornstarch and a few drops of soy sauce to the chicken. Mix the remaining corn starch to a small amount of water in a bowl and set aside. In a wok, heat cooking oil and stir fry the chicken pieces till light brown. Remove from heat and set aside. In the same wok add some more oil and stir fry ginger for a few minutes, then add the white part of the spring onions and stir fry quickly, add the tofu, soy sauce, ajino moto, vinegar, pepper powder and stir fry but gently, taking care not to break the tofu. Add chicken and mix gently. Add the remaining corn starch that was mixed in water. Stir fry gently for 1 minute and check seasoning. Sprinkle some sesame oil and top with the remaining spring onions. Serve hot with fried rice.

Shkmeruli - Chicken cooked in cream and garlic

"Shkmeruli Is a Georgian Chicken dish in a sauce of garlic and cream from the Racha region in Georgia. I had the opportunity to try this in a restaurant in Batumi, Georgia and truly loved it. I have given the recipe a twist by adding red chilli powder, turmeric and some parsley, but you can omit these and stick to the traditional recipe."
Serves 4
Ingredients
2 whole young chickens
2 tsp red chilli powder (optional)
1 tsp turmeric powder (optional)
100 grams of garlic
200 ml of cooking cream (160 grams of sour cream if you prefer)
160 ml of water (100 ml if you are using sour cream instead of cream),
60 ml of oil Handful of chopped parsley (optional)
Salt to taste
Directions
Wash the chickens and pat dry with a kitchen towel. Cut the chickens length ways from breast but do not separate into two halves. Rub oil, chilli powder and salt on to both sides of the chicken. Flatten the chickens out and add one chicken to a pan of hot oil and press it down.Use a pestle or any suitable heavy object to keep the chicken flat so that it cooks evenly. Fry both sides of the chicken. When the chicken is cooked, turn off the heat and remove the chicken from the pan. Repeat the same process for the other chicken. Remove and let it cool down a bit. You can keep it whole or cut into pieces. Do not discard the oil as it will be used to fry the garlic. Crush the garlic. Add the crushed garlic to the oil in the pan that was used to cook the chicken. Use a wooden spoon to mix the garlic and oil. Add 160 ml of water (200 ml if you are using sour cream instead of cream) and heat on a medium heat, stirring continuously. Add 200 ml of milk (or 160 grams of sour cream). Taste and add a little salt if needed. Stir until the mixture boils and then turn off the heat. Add the chicken pieces to an oven proof dish (traditionally a Georgian clay ketsi dish is used).Pour the cream (or sour cream) and garlic mixture onto the chicken pieces and add the ketsi to a hot oven for 3-5 minutes. Serve hot.
