Mung Beans Salad


Ingredients
1 cup sprouted mung beans
1 red onion chopped finely
2 medium tomatoes deseeded and chopped
1 cup pomegranate
Some chopped fresh coriander leaves
For the dressing:
2 tbsp olive oil
Juice of half lemon
½ tsp crushed black pepper
1 tsp brown sugar
Salt to taste

Directions

Mix together the ingredients for the dressing and keep aside. In a bowl mix the chopped onions, mung beans, tomatoes and pomegranate seeds. Pour the dressing over the salad and mix well. Garnish with chopped coriander leaves.
