Aloo Capsicum
Do Pyazza (Potatoes and Capsicum Stir Fry)

Ingredients
1 large potato peeled and diced into ½ inch cubes
3 large capsicums (bell peppers) deseeded and cut into ½
inch cubes
2 medium onions quartered and the layers separated
1 tsp red chili powder
1 ½ tbsp tomato paste
1 tbsp tomato ketchup
8 tbsp oil
Salt to taste
Directions
Heat oil in a heavy bottomed pan and shallow fry the
potatoes till cooked. Remove the potatoes and excess oil if more than 2 tbsp.
Stir fry onions for 1 minute, then add capsicum, stir fry for another 2
minutes. Add chili powder, tomato paste, salt, ketchup and potatoes. Toss them
together. Keep on heat for 1 minute. Serve hot.
